Is the street food safe, and is there any way to tell?

Short answer

There is an actual certification to look for — Clean Food Good Taste, run by the Ministry of Public Health. It puts a checkable mark on what is otherwise a judgement call.

The mark the state puts on kitchens

Clean Food Good Taste is a Department of Health programme under the Ministry of Public Health that certifies hygiene standards at eating places, explicitly to build trust among tourists and other customers.

Its reach is real rather than symbolic: at Suvarnabhumi's passenger terminal, 58 restaurants hold the certification — over 85% of the outlets there — and the department is extending the scheme to five more airports and developing a higher Plus tier.

How this changes the question

Elsewhere the street-food question ends in intuition. Here it partly ends in a logo: a certified place has been inspected against a hygiene standard, and that is a different kind of assurance from a busy queue.

The other certifications overlap in the same direction. SHA — Amazing Thailand Safety and Health Administration — marks safety and hygiene standards across tourism businesses in three tiers, and Thai SELECT certifies restaurant quality including cleanliness of kitchen, bathroom and surroundings.

For stalls with no mark at all

Street food here is a national institution rather than a risk to be managed — sold on every corner from morning to night, and called a heaven of street food by the Michelin guide. Skipping it is not the sensible position.

For an uncertified stall, the ordinary reading still applies: high turnover, cooking done hot and to order in front of you, a queue of locals at the right hour. Certification is the shortcut; observation is the fallback.
